Cayenne Spiced Stuffed Peppers

 

This dish is easy to make and very versatile.

You can customize them however you wish, by using different spices, herbs, protein and carbs.

 
 
 
 

Ingredients:

(3-4 servings)

3 bell peppers, cut in half lengthwise, seeds removed 

½ - ¾ tsp cayenne pepper 

4 tbsp olive oil

1 package lean ground turkey

1 ¾ cups zucchini, chopped

1 cup celery, chopped

½ onion, chopped

2 garlic cloves, minced

1 cup cooked quinoa or brown rice

½ tsp dried thyme

Fresh parsley, chopped for garnish

 
 
 

Instructions:

  1. Preheat the oven to 375 F. 

  2. Cut bell peppers in half lengthwise, remove seeds. On a baking dish, place peppers cut side up. Season with salt and half of the cayenne pepper.

  3. Heat 2 tbsp of oil in a pan over medium-high heat. Add the onion, celery, zucchini, garlic and ground turkey. Cook until turkey is browned and vegetables are tender. 

  4. Stir in quinoa or brown rice, remaining cayenne pepper and season with salt and pepper. Stir to combine, then remove from heat.

  5. Spoon filling into peppers. Drizzle with remaining olive oil. 

  6. Bake covered for 20 minutes, then bake uncovered for 20 minutes, or until peppers are tender. 

  7. Remove from the oven and sprinkle with fresh chopped parsley. 

  8. Serve with Spade & Sparrows Pinot Noir and enjoy!
