No Bake Salted Peanut Butter “Cookies”

 

Clearly I’m into cookies these days.

These “cookies” only have five ingredients and are a delicious dessert or snack if you’re craving something sweet and salty.

Ingredients:

(Makes about 18 cookies)

1 cup raw almonds

½ cup unsalted smooth, natural peanut butter - I used @mumgry from @legends_haul

1 cup Medjool dates, pitted

2 tsp pure vanilla extract

1 tsp fresh lemon juice

Sea salt, for sprinkling

 
 
 

Instructions:

  1. Line a baking sheet with parchment paper and set aside

  2. Add the almonds to a food processor and grind on high until you have a coarse meal, about 30 seconds.

  3. Add the peanut butter, dates, vanilla, and lemon juice to the food processor. Pulse the mixture a couple times to get everything moving. Then mix on high speed until you have a uniform “dough” that clumps together.

  4. Portion the dough into balls and place on a baking sheet.

  5. Press the balls down with the palm of your hands to form the “cookies.”

  6. Sprinkle the tops of the cookies with sea salt.

  7. Place in the refrigerator for at least an hour and then enjoy!​​
