Reese’s Peanut Butter Bites

 

An early Valentine's Day treat for you!

Anything with peanut butter and chocolate - I'm sold. These Four Ingredient Reese's Peanut Butter Bites are SO delicious and easy to make with simple ingredients.

Ingredients:

(Makes 8-10 bites)

2/3 cup all natural peanut butter (Earth's Own with sea salt is my favourite)

1 tbsp pure maple syrup

1-2 tbsp coconut flour

1/2 cup 70% dark chocolate ( I used dark chocolate belgian wafers)

Optional: Sea salt, for sprinkling on top

 
 
 

Instructions:

  1. Mix together peanut butter, coconut flour and maple syrup in a mixing bowl and mix well. Add another tablespoon of coconut flour if the batter is runny. The mixture should be sticky like a wet cookie dough.

  2. Using a spoon to form bites, scoop peanut butter mixture onto a parchment lined baking sheet. Slightly flatten the top of each with your fingertips. Place the baking sheet in the freezer for 20 minutes.

  3. After 20 minutes, melt the chocolate in a small saucepan over very low heat, stirring frequently. Transfer melted chocolate to a small warm bowl. Quickly use a fork to dip each peanut butter bite into chocolate. Make sure to coat evenly. Transfer back to a parchment lined baking sheet and sprinkle with a little coarse sea salt if desired.

  4. Place the baking sheet back in the freezer for 30 minutes to 1 hour and enjoy!

  5. Keep in the freezer until ready to eat.
