Sheet Pan Salmon with Baby Potatoes and Asparagus

 

Another quick and easy sheet pan dinner.

Ingredients:

(4 servings)

4 6 oz salmon fillets

3 cups baby potatoes, halved

2-3 tbsp olive oil

1 garlic clove, minced

1 lemon, juiced

1 bunch asparagus, stems removed

1/3 cup fresh parsley, chopped

Salt and pepper, to taste

 
 
 

Instructions:

  1. Heat oven to 400 F.

  2. Boil or steam potatoes for 15 minutes or until soft. Drain the water and place potatoes in the pot.

  3. Combine olive oil and garlic and pour over potatoes, mix well.

  4. Place salmon, asparagus and potatoes on a sheet pan lined with parchment paper.

  5. Drizzle the salmon and asparagus with olive oil.

  6. Pour lemon juice over the salmon fillets and sprinkle with fresh parsley.

  7. Season everything with salt and pepper.

  8. Place in the oven and bake until the potatoes are golden and the salmon is opaque throughout, about 10-12 minutes.

  9. If you’re using a thinner piece of fish, bake the potatoes for 15 minutes before adding salmon and asparagus to the sheet.

  10. Serve with chilled Spade & Sparrows Pinot Grigio and enjoy!
