Cucumber, Apricot and Avocado Salad

 

Hydration is essential for almost every bodily function including circulation, digestion, absorption and elimination of waste.

Water requirements vary greatly from person to person, based on activity level, diet and lifestyle. Our requirements however, increase when we are in warmer temperatures (ie. these hot summer days we're having).

One way to help ensure we are getting enough water is to eat foods that are high in water content such as fresh fruits and vegetables.

This cucumber, apricot and avocado salad is super hydrating, refreshing and easy to make. Made with simple and in season produce.

Ingredients:

(4 - 6 servings)

2 medium cucumbers, sliced

6 stalks celery, thinly sliced

5 fresh apricots, cut into wedges

1 to 2 avocados, halved and chopped

1/2 cup marcona almonds, chopped

1/3 cup fresh lemon juice + lemon zest

1/3 cup olive oil

Fresh dill, for garnish

Sea salt, to taste

 
 
 

Instructions:

  1. In a bowl, toss together the cucumber with some sea salt. Let stand for 15 minutes, then drain.

  2. Add the celery, apricots, marcona almonds, and avocado to the bowl.

  3. In a smaller bowl whisk together the lemon juice and olive oil and season with sea salt if needed.

  4. Drizzle dressing over salad, and toss lightly to coat.

  5. Top with lemon zest and dill sprigs and enjoy!
