Vegan Green Goddess Dressing

 

This dressing is very flavourful, packed with healthy fats and fresh herbs.

The apple cider vinegar and lemon juice in the dressing can also help to support digestion. It's a great way to add flavour and nutrition to your summer salads.

Ingredients:

(Makes 1.5 cups)

1 garlic clove, peeled

1 large avocado

7-8 tbsp water

5 tbsp apple cider vinegar

3-4 tbsp fresh lemon juice, to taste

1/4 cup extra virgin olive oil

1/2 cup packed fresh basil leaves

1/2 cup packed fresh parsley

1/2 cup packed green onion

Sea salt, to taste

 
 
 

Instructions:

  1. Add garlic clove to a food processor and process until finely chopped.

  2. Add in the water, olive oil, lemon juice, apple cider vinegar, fresh herbs and avocado. Process until smooth.

  3. Season with salt to taste and enjoy!
