Mediterranean Cod

 

This recipe is easy to make with simple yet flavourful ingredients.

It provides a great source of healthy fats from the olive oil and olives and protein from the cod. I served it with quinoa and sautéed spinach to make it a complete meal.

 
 
 
 

Ingredients:

(4 servings)

4 4 oz pieces of cod

1/4 cup capers

1 cup cherry tomatoes, halved

1/3 cup olives, sliced

1-2 tbsp olive oil

1/2 lemon, sliced

Fresh parsley, chopped

 
 
 

Instructions:

  1. Preheat oven to 400 F.

  2. Place fish in a baking dish and drizzle with olive oil, season with salt and pepper.

  3. Top the fish with the capers, tomatoes and olives and place in the oven.

  4. Cook for 8-10 minutes, then broil for 2-4 minutes.

  5. Drizzle with lemon juice and top with fresh parsley.
