One-Pot Pasta

Ingredients:

(4-6 servings)

12 ounces linguine

1 ½ cups cherry or grape tomatoes, halved

1 onion, thinly sliced (about 2 cups)

4 garlic cloves, thinly sliced

½ tsp red pepper flakes

2 sprigs basil, plus torn leaves for garnish

2 tbsp extra-virgin olive oil, plus more for serving

Coarse salt and fresh ground pepper, to taste

4 ½ cups water

Freshly grated Parmesan cheese, for serving

 
 
 

Instructions:

  1. Combine pasta, onions, tomatoes, garlic, red-pepper flakes, salt and pepper, water, olive oil and basil in a large skillet. Bring to a boil over high heat.

  2. Boil mixture, stirring and turning pasta frequently with tongs, until pasta is al dente and water has nearly evaporated, about 9 minutes.

  3. Divide among bowls, garnish with fresh basil.

Serve with grated parmesan and olive oil and enjoy!
