Roast Turkey Egg Cups

 

This low-carb recipe is a great meal to enjoy anytime of the day.

It’s high in protein, easy to make and takes less than 15 minutes to cook.

Ingredients:

(Makes 6 egg cups)

@chosenfoods avocado spray

6 slices oven roasted turkey breast (nitrate free)

Shredded cheese, of choice

6 eggs

Salt and pepper, to taste

Red pepper flakes, to taste

Chives, diced for garnish

 
 
 

Instructions:

  1. Preheat the oven to 400 F and grease a muffin tin with cooking spray.

  2. Line each cup with a slice of turkey and sprinkle with cheese.

  3. Crack an egg into each turkey cup; season with salt and pepper and chives.

  4. Bake until eggs are cooked through, about 12-15 minutes depending on how runny you like your yolk.

Top with red pepper flakes and enjoy!
